Three Easy & Quick Muffin Recipes

Muffins are a type of pastry that works around the year. They are tasty, can be transported easily and at the same time is already the perfect size for a sweet snack in between. On top of this, there are various types of muffins. The chocolate muffin is just the beginning. Luckily, most muffins are easy to make, thus I share my top three easy and quick muffin recipes!

Each muffin recipe is measured for approx. 9 muffins.

Chocolate Muffins:

As mentioned above, chocolate muffins are just the beginnings, so there is no better way to start this article. If you don't know what to put into your muffin the safest answer is chocolate!

What do you need? 

♦ eggs: 2
♦ cocoa powder: 30g
♦ flour: 250g
♦ milk: 170 ml
♦ baking powder: 2 teaspoons
♦ unsalted butter: 110g
♦ bittersweet chocolate: 200g
♦ icing sugar: 120g

If you don't want to use cocoa powder or don't have any at home, you can melt a bit of cooking chocolate instead. The result remains the same. Now to business:

First, preheat the oven to 190°C and place the muffin forms into each depression on the muffin tray.

Second, chop the bittersweet chocolate into small pieces. Then mix the flour, cocoa powder, and baking powder in a bowl.

Afterwards, melt down the butter and mix it with the sugar, milk and eggs in a separate bowl - stir so long until the mass has a smooth surface. Once this state has been achieved, add the flour one by one, and add half of the chopped chocolate pieces.

Then you can already start to put the dough into the muffin forms - fill only around 3/4th of each form for the perfect result. Place the tray into the oven for around 20 minutes!


Mama's Chocolate-Raspberry Muffins: 

These muffins fall under the category of "Mum does it best." Her specialty are chocolate-raspberry muffins and they are one of a kind. Thus, what follows Muffins á la Mama:

What do you need? 

♦ cooking chocolate: 75g
♦ baking powder: 1 teaspoon
♦ raspberries: 110g
♦ eggs: 2
♦ flour: 130g
♦ sugar: 110g
♦ cooking oil: 75ml
♦ yogurt: 75

Firstly, stir the eggs and sugar until they become creamy. Then slowly add the oil and yogurt one by one. In another bowl mix the flour with the baking powder. Don't forget to preheat the oven to 175°C.

Secondly, boil water in a pot and put a bowl with the cooking chocolate into to melt the chocolate. Afterwards, add the chocolate to the dough.

Thirdly, mix the dough with the flour. Then add the muffin forms to the baking tray and fill them with the final dough product. At this point you can either mix the raspberries into the bowl or add them afterwards to each muffin form.

Last but not least, place the tray into the oven and bake the muffins at 175° for 20 - 25 minutes.


Banana Muffins


What do you need? 

♦ baking powder: 1 teaspoon
♦ banana: 1
♦ eggs: 2
♦ chocolate: 30g
♦ flour: 90g
♦ butter: 60g
♦ sugar: 60g
♦ nuts of your choice: 1 1/2 tablespoons

Start by chopping the chocolate into small pieces and preheating the oven to 180°C.

Then separate the yolk from the egg white. Use the egg white to beat it into stiff peaks. Add the sugar and butter and start to stir it into a fluffy mass. Afterwards, add the egg yolk, flour and baking powder one by one.

When the dough is finishing, start adding pieces of nuts to it - the size of the pieces depends on your liking. Then chop the banana into smaller pieces  and along with the chocolate stir it into the dough.

Once this is done, fill the muffin forms up to two thirds. Bake the muffins for 20 minutes!
